Because I’m a workaholic, long weekends mean I have more time to work on Foodshake, write this newsletter, and plan out new content like tip videos and Friendly Veg Podcast episodes.
But I try to not work TOO hard. I try to treat myself. Today that meant: making pancakes!

Pancakes
This recipe has been in my family for generations, really! I veganized it by removing the egg and adding more baking powder. Corn starch is a new addition — I only started adding it in this year. It helps make them thick.
Ingredients
1 1/2 cup flour
1 tbsp baking powder
